Fasolia Salad Recipe

Fasolia Salad Recipe

Ingredients:

500g cannellini beans

1x Spanish onion, diced

1x shallot, diced

1x bunch celery, grated

1x bunch parsley, roughly chopped

½ bunch dill, roughly chopped

1 red capsicum, diced

2 tbsp capers

 

Dressing:

½ cup red wine vinegar or balsamic vinegar

1 cup olive oil

Salt

Pepper

 

Method:

  1. Soak cannellini beans in water overnight or skip this step if using tinned beans.
  2. In a pot, add the beans & cover with water. Bring the beans to the boil.
  3. Once the beans have boiled, strain the water out from the pot, rinse the beans and add fresh water. Bring to the boil again and cook until softened, checking regularly to test the beans firmness.
  4. Once beans are soft, remove from heat and strain.
  5. Add the beans, Spanish onion, shallots, celery, parsley, dill, red capsicum & capers to a bowl.
  6. Combine the dressing ingredients together and add to the salad when ready to serve.
