Traditional Greek Christmas Almond Shortbread

Ingredients:

500g butter

2 egg yolks

1 tsp vanilla sugar

Drop of ouzo

1/2 cup icing sugar

+ extra for decorating

2.5 cups self-raising flour, sifted

2.5 cups plain flour, sifted

1 cup crushed almonds

Method:

1. Using a mixer, blend the butter, egg yolks, vanilla sugar, ouzo and icing sugar until light and fluffy.

2. Add self-raising flour, plain flour and almonds.

3. Mix together to form a dough.

4. Take handfuls of the dough, shape into crescents and place on a lined baking tray.

5. Bake in the oven at 180 degrees for 15-20mins. Allow the biscuits to cool before dusting with icing sugar.
